Wet the towels every 12 hours or so, and you should get a steady fermentation temperature in the 66-68F range. Most brewing shops sell stick-on thermometers that can be attached to your fermentation vessel to monitor the temperature. Switch to a Full Batch Boil – Boiling all of your wort will benefit to your beer. If you are only boiling 2-3 gallons of a 5 gallon batch, then you are not getting the full benefits of a 60-90 minute boil.

Homemade hard apple cider brewing is usually done in 1 gallon batches, so this helps. Make sure you follow your package instructions. For example, Wyeast says 1/2 tsp per 5 gallons; others brands may tell you that you should use at least 1/2 tsp per gallon.

Your sugar will go into solution. For 5.5 gallons of Seltzer at 7% abv, use 6.5 lbs of dextrose, and for 5.5 gallons of 5% abv Seltzer, use 4.5 lbs of dextrose. Add sugar to hot water and stir to dissolve. Boil for 10 min, measure your gravity and adjust as needed. Once the desired gravity is reached, turn off your heat source and add the Propper Seltzer yeast nutrient. Transfer the sugar base to the fermenter at desired fermentation temp. Aerate by shaking or oxygenating.

The other way to calculate how many bottles you’d need for 5 gallons is this: 3,785.4 (ml per gallon) x’s 5 (gallons) = 18,927 (ml) / 750 (ml per Belgian bottle) = 25.23 bottles.
